Semolina Toast w/fresh ricotta & pear

The This dish is a great alternative to a French toast for brunch gatherings or up version of French toast.

2 large ripe pears

4 large slices semolina or other dense bread cut about 1” thick

2 tablespoons extra virgin olive oil

2 tablespoons mild honey

Sea Salt to taste

Slice the pears about ¼” thick slices. 

Brush each side of the bread with the olive oil.  Put the slices of bread in a large saute’ pan or skillet and cook over medium heat, turning the bread until crisp and lightly browned on both sides.

Remove the bread and spread a nice amount of the fresh ricotta onto each slice.  Place the sliced pears over the top of each slice.  Drizzle the honey of each slice and sprinkle with sea salt to taste.
