If you’re looking for new ways to make a cookie a little healthier, but still taste great than this cookie is for you! Made with quinoa flour, almond flour and no butter, these are super easy to make and really delicious.
1 cup Quinoa Flour
1 cup Almond Flour
2 tsp oil (sunflower, grape seed)
1/4 cup granulated sugar (I like to use sugar in the raw)
1/2 cup bitter or bittersweet chocolate chunks (you can buy 1 2.8oz chocolate bar and break into pieces)
1/4c chopped almonds or walnuts
1/2 tsp baking soda
1 tsp vanilla extract
2 eggs, whisked
2 tsp milk (or almond milk)
1/2 tsp cinnamon
1/4 tsp salt
Preheat the oven to 325 degrees F
In a large bowl whisk together all the dry ingredients.
Add in oil, eggs and vanilla extract.
Add in the milk one tablespoon at a time and mix with hands to from a dough. If dough gets to sticky add a little more quinoa flower.
Mix in the chocolate chunks and nuts if using.
Shape into 1 inch balls and place on a parchment lined cookie sheet.
Bake on the middle rack for 14-18 minutes until golden brown.
Let cool and enjoy!
Can be kept in airtight container for 3 days or frozen.
