My friend Amber sent me this recipe and it so delicious. This is a perfect Fall side dish for pork chops and can be eaten hot or cold.
Prosciutto – one package 3 oz
Butternut squash – diced into bite size pieces -2 cups
Brussel sprouts – small bag trimmed and halved
Blue cheese or Gorgonzola crumbles
In a large non stick skillet, fry prosciutto until crispy and set aside.
Leave the grease in the pan (there won’t be much) and add a little olive oil to sauté the veggies
Add butternut squash and Brussel sprouts and sauté to preferred doneness (I like my Brussel sprouts crispy); season as you go
When the veggies are done, crumble prosciutto and add the blue cheese
Eat and enjoy!
I’ve had this both hot and cold and it was good either way. Great side for pork chops!
